This oddity is neither like Scotch nor any other kind of aged spirit. Made in the Cognac region of France from a blend of malted barley and wheat, it’s aged five to seven years in a combination of Limousin oak, cherry wood and acacia casks. The result is rich in cherry, peach, pear, almond and vanilla scents while the flavor combines sweeter floral qualities of Bourbon with a Cognac and Calvados fruitiness. Once you get over the urge to categorize it, the spirit is very easy to drink. Maybe it’s the French love for wine, but with a little sweet vermouth and bitters, it makes a fantastic Manhattan. 40% abv.
